In Las Vegas, enjoy unique dim sum in a theatrically illuminated dining room

Since opening late last year alongside Las Vegas’s newest and most over-the-top hotel, Fountainbleau, the theatrically lit dim sum restaurant Washing Potato has only become more of a spectacle. Transparent video screens now cover the front windows, futuristically advertising interesting dumplings and the unusual brand name, and the light shows inside the black box dining room are more immersive and varied than before. Service is better, too, a welcome departure from the somewhat disinterested affect we noted on our first visits last December. Thanks to great presentation, even ordering a milk tea feels akin to getting champagne service elsewhere on the Vegas strip.

What has nosedived, surprisingly, is the food. Curry cuttlefish remained tasty, but previously bold Venison Puffs were filled with bland, underseasoned meat this time; Squash and Pine Nut Dumplings featured undercooked vegetable cubes, while Jasmine Tea Smoked Ribs were overcooked enough to make the rib meat thin and chewy. A Mango Pudding was nearly flavorless, while a Black Sesame Mochi dessert was so overloaded with crushed peanuts that no other flavors were obvious. Multiple online menu items were unavailable – “replaced,” as our server unapologetically put it, though not with any obviously better options.

We spent eight months after our last Washing Potato experience genuinely excited to go back. Barring a culinary overhaul, we aren’t sure whether we’ll return again.
