
The Beaudry Room, Airlight, and Sed at Conrad Los Angeles
There are indeed additional José Andrés restaurants in LA beyond Agua Viva and San Laurel
When the Conrad Los Angeles opened in 2022, one of the new hotel’s biggest attractions was a collection of entirely new José Andrés restaurants surrounding the lobby – a concept previously deployed with great success in the SLS Beverly Hills. An all-day restaurant named Agua Viva debuted on the rooftop next to the lobby, a dinner destination with breakfast service called San Laurel took a mostly indoor space, and three smaller drinking and dining experiences were designed to accompany them: The Beaudry Room, Airlight, and Sed.
Located immediately next to the hotel’s front desk, The Beaudry Room is a standalone bar with its own sandwiches and snacks, sharing a kitchen with Agua Viva. Here, you’ll find versions of the chef’s famous grilled cheese and honey sandwich, watermelon-tomato skewers (with caramelized pistachios and goat cheese), and crab croquettes, as well as the Txule Burger, a Spanish-influenced smash burger. In addition to limited bar seating, small tables are offered for two people to sit together while eating and/or drinking, as well as couches that flow into the hotel’s lobby.
Airlight’s menu was initially designed as a poolside experience – a small selection of easy-to-eat items that could be ordered while seated inside the gated-off, roofside pool, which is only accessible to registered hotel guests. Many of the choices overlap Agua Viva’s and The Beaudry Room’s menus, and can generally be ordered while dining at Agua Viva if you spot something interesting.
Sed fizzled out early in the collaboration. It launched only as a small bar serving cocktails and wine, but was planned to have its own special collection of snacks that skewed somewhat more modernist in techniques, including spherification, gels, and more. Although a sample menu of bites was created, it wasn’t publicly shared, and plans to use the bar for similarly innovative cocktails quietly disappeared. The Sed space now serves as a secondary service bar for San Laurel, and potentially as another place (besides The Beaudry Room) to grab a drink when San Laurel is closed.
All of these spaces can be seen on the 10th floor of the Conrad Los Angeles. Reservations are not required.
