In Buffalo, an innovative chef's "Tex-ish" meats combine Indian flavors with Texas barbecue techniques
Recently shortlisted by the James Beard Foundation, Buffalo, NY’s Southern Junction uniquely infuses Indian flavors and ingredients into a Texas-style barbecue experience — one that only becomes fully apparent when you’re past the long waiting line and inside at the counter, smelling the garam masala-prepped Barbacurry beef shoulder, brisket biryani, and coconut paratha Foldie wraps for yourself.
Though the portions tend to be moderate rather than generous, the menu is all hits, no misses: Prime Brisket, Pork Ribs, Cardamom Cornbread, and Smoked Turkey Breast were among our favorites. Our only complaint about the standard dessert option (Banana Pudding) was that it wasn’t as daring as everything else.
Given the impressive technique and recipes already on display here, JBF Emerging Chef finalist Ryan Fernandez (formerly with Williamsville’s Aro Bar de Tapas) should go as broad and wild as possible.
