
Prince Street Pizza
Expanding from NYC to OC, this pizza chain sells triangular Neapolitan and square Sicilian slices
Having lived long enough to see “New York-style” pizza styles and preferences evolve, we’re not going to wade into the debate over what “real” NY pizza is or should be; truly, there’s room for every variation to thrive. That said, the increasingly famous and rapidly expanding Prince Street Pizza (stylized Prince St. Pizza) promises guests a “NYC slice shop experience,” even making dough with water filtered to replicate New York’s, a trick used elsewhere for bagels.
If any of this intrigues you, the chain’s first OC shop – ironically located at Costa Mesa’s Triangle Square – gives you the choice of two types of pizza, oversized triangular Neapolitan slices, as well as square Sicilian “SoHo” pieces. Try both: The triangular slices are thin-crusted and thankfully not as greasy as NYC’s classics, while the squares have thicker dough with crispy edges.
Faced with many choices, including similar-enough variants on several basic themes, we found two spicy pepperoni-topped pizzas (meat lovers and spicy spring squares) to be winners, with the “oakey smokey” as a more sophisticated riff on the classic margherita. Not everyone will like every flavor – our Hawaiian-style heretic was underwhelmed by the latest specialty flavor, developed with Tastemade – but after trying a bunch of options, we rated the collection as more hits than misses.
Healthier than we’d expected going in, Prince St. also caters to vegetarians with plenty of good options, including both pizzas and salads. We’ll likely be back to try more.
