Nested Las Vegas luxury hotels offer Italian, Korean-American, and classic American dining

How many distinctive culinary experiences can one hotel offer? Between the Park MGM Las Vegas and its hotel-within-hotel The NoMad Las Vegas, the answer is “quite a few.”

After rebranding from the Monte Carlo in 2018, the Park MGM became a must-visit destination for foodies when a full-fledged Eataly location opened inside, including a collection of excellent Italian restaurants catering to everything from breakfast and coffee to dinner and cocktails.

Add to that chef Roy Choi’s Best Friend – effectively a Kogi BBQ truck writ large, with additional Korean and LA dishes from Choi’s prior restaurants – and The Chef Truck, a 2023 addition serving Cubano sandwiches like ones portrayed in the Choi-informed movie Chef.

Then there’s The NoMad Las Vegas, a hotel-inside-a-hotel with European-style boutique rooms and service. Two additional restaurants, the NoMad Library and NoMad Bar, are Manhattan-based fine dining destinations separated by a hallway. As the Library’s name suggests, the dining room is inspired by the NYC location’s dark, luxurious library space, while the Bar has a classic 1920’s, art deco-adjacent style. Both focus on classical American food and drinks, tastefully served.

While the Park MGM and NoMad don’t have as many restaurants inside as the newer Fontainebleau Las Vegas or Resorts World Las Vegas, there’s a lot more steak here than sizzle thanks to MGM’s high-quality choices. We consider this a must-visit destination when traveling to Las Vegas.
