Sample beef noodle soup variations from across China, all at a single Irvine restaurant

Not every noodle shop is or needs to be spectacular; some are content to be solid neighborhood places. And that’s the story with the Orange County location of Noodology, a three-location chain with branding that looks like it should be bigger – and was, before two additional LA-area outlets closed years ago.

We were pleased with Noodology’s wide range of noodle soups from across China, including a Chengdu / Sichuan hot and sour beef noodle soup and Cantonese style beef noodle soup, representing the “spicy” and “mild” poles of Chinese cuisine. While the Cantonese soup is largely sliced meat, bok choi, bamboo shoots, scallions, and beefy broth, the Chengdu version is loaded with peanuts and chilis as well, with a tangier, numbing broth. We found the noodles to be cooked on the soft side when eaten in the restaurant, and plentiful.

Many other soups riff on similar themes and ingredients, including a Chongqing pork intestine soup with chicken broth, a numbing Guizhou beef noodle dish with prickly ash, and additional options with tomatoes, eggs, and/or different types of peppers. In recent months, the restaurant has added a dry egg noodle bowl with garlic shrimp, billed as non-spicy and kid-friendly, further expanding its options.

Even more compelling are their appetizers, including a noteworthy spicy sliced pig’s ear, and solid spicy popcorn chicken, potato floss, and a combination oxtail and tripe plate with chili sauce. If you love eating duck, you’ll be interested to see that braised spicy wings, tongues, heads, and necks are all available here; you can wrap up your meal with desserts including nut-topped brown sugar rice cakes, sesame balls, and Sichuan crystal jelly.

On our visit, everything came out quickly, and we appreciated the friendly (though somewhat awkward) service. Since our visit, though, the service has reportedly become somewhat uneven and occasionally uncomfortable for guests. We would still recommend giving Noodology a try if you’re in the mood to explore some locally uncommon Chinese noodle dishes, especially if some of the appetizer items above appeal to your palate.
