As Neapolitan and Detroit-style pizzas have surged in popularity, Buffalo-style pizzas have remained obscure outside of that Western New York city. Founded (and later sold) by a Buffalo-area pizziolo who trained on the local style before improbably mastering the art of making 800-degree Neapolitans in a food truck, Jay’s Artisan continues to serve flawless spins on the classic thin, quick-charred Italian style, and a smaller collection of Detroit squares.
Jay’s was locally early to adopt chili honey as a sweet-spicy ingredient, and quick to craft pizzas around gourmet charcuterie favorites, such as ‘Nduja. Under current management, the pizzeria recently ranked #6 in the United States and #28 globally, reflecting an excellence transcending local interest. Worth a visit if you happen to be in the area.
