Habuya Okinawan Dining

A truly unique Japanese izakaya experience heavily influenced by Okinawan recipes and ingredients

Although Japanese cuisine has a common core of dishes that are found all throughout the island nation, every region and prefecture proudly specializes in certain items that either can’t be found elsewhere in the country or are widely identified by place of origin – “Kobe beef” was a historic and internationally known example. As the most southern and western island – and smallest – in Japan, Okinawa has its own distinctive identity, and Tustin’s Habuya Okinawan Dining allows you to experience its cuisine in a small izakaya-style setting.

From concept to execution, we’ve found Habuya to be completely fascinating. From Okinawa’s slimy, noodle-like Mozuku seaweed and salty miniature vines of sea grapes to stewed pig’s feet soba noodle soup, Habuya’s sometimes wild, sometimes rurally inspired, sometimes low-end riffs on well-established Japanese dishes provide windows into how the less populated island sources ingredients and adapts recipes that might otherwise have seemed locked in place.

Croquettes, known as korroke in Japan and generally served with meats, potatoes, and seafood, are infused here with clam chowder and topped with a tonkatsu-like sauce. Even the desserts, such as an Okinawan yam cake topped with mont blanc-style paste noodles, and daifuku (red bean) mochi, somehow manage to look unique and special here.

Located at the end of a strip mall near a Stater Bros. supermarket and India Kitchen, Habuya is open solely for dinners five days each week, and provides little evidence from the outside that you’re about to walk into a space that feels very much like an izakaya in Japan – in turns charming, cozy, and surprising. Take the hints that something special is going on here, avoid the menu’s common sashimi and ramen dishes, and lean heavily into Okinawan options. Habuya richly rewards the adventurous, and we’re excited to return again.
