Cajun Crawfish – Santa Ana

Santa Ana boil-in-bag cajun seafood concept closes after trying all-you-can-eat option

For nearly five years, Cajun Crawfish operated as a boil-in-bag cajun shellfish restaurant in Santa Ana, following the same basic business model as numerous competitors: Turn seafood into a somewhat fun, very messy experience by serving bags of boiled clams, shrimp, and crab, which are then cut open, letting guests use their hands to eat while peeling away shells and tails. If you skip the mostly fried appetizers, you just need to decide how much to spend on seafood per person – it’s all sold by the pound – and what sort of flavor (cajun, extra garlic, garlic butter, or unsauced Louisiana style) and spice level you want, then whether to add sausage and corn to your boiling bags.

We know why this concept appeals to owners: Modestly trained employees can simply boil ready-to-go bags rather than requiring stronger cooking skills, and as McDonalds proved, nearly anyone can throw fries, calamari, catfish, and shrimp in a deep-fryer. Similarly little work is required in the dining room: Customers grab their trays with bags of seasoned shellfish, then handle all the rest of the work on their own, except cleaning.

Cajun Crawfish differed only a little from some competitors: In addition to its boiled and fried items, it began offering fresh and char-grilled oysters at some point, and we tried the latter, which were fine – not exactly New Orleans Acme Oyster House-quality, but topped with garlic and served sizzling hot. We also ordered the Louisiana-style shrimp with Andouille sausage, Littleneck and Manila clams, garlic butter shrimp, and two types of (good) fries. There were no surprises – all of the seafood tasted exactly like one would expect from food served straight from sauced boiling bags: moist, a little slimy, and as seasoned as we ordered.

We skipped the eponymous crawfish, as they were resuscitated from frozen and – in our view – never fun to eat. Although they look like little lobsters, they’re mostly shell with so little meat that you’ll have to suck the shells to get any sustenance. We’re not gluttons for punishment.

After testing an all-you-can-eat model, Cajun Crawfish closed in 2023.
