A high-end pastry and coffee shop adjacent to Bazaar Mar, transforming into an evening cocktail bar

Located inside Las Vegas’s Crystal shops next to chef José Andrés’ new fine dining restaurant Bazaar Mar, Bar Centro pivots between two concepts at 5pm each day: In the mornings and afternoons, it’s a Spanish bakery cafe serving pastries, sandwiches, coffee, and tea, then at night, it becomes a cocktail, jamón, caviar, small bite, and dessert bar – a place to either wait for a Bazaar Mar table or linger after a meal.

José fans will recognize the evening version of Bar Centro as derived from Washington DC’s Barmini and NYC’s Bazaar Bar, while the morning/afternoon experience is closer to Mercado Little Spain’s Que Sweet. For breakfast and lunch, you order at a counter; around 3PM, servers arrive and begin transitioning Bar Centro to table service.

Daytime highlights include the Flor de Castillo, a cookie with milk and dark chocolate hearts that should be a sharing litmus test for first dates, and a disarmingly good Basque Cheesecake – the first chocolate version offered at a José restaurant, made even better with toffee and hazelnuts.

Xuxos, Spanish-style sugared and deep fried croissants filled with Nutella, fruit, or Catalan cream, are a classic treat recently spotlighted by José. Also try Mellorcan Ensaïmada buns sliced and filled with similar pastry creams (including a dreamy olive oiled Pan con Chocolate); and undermarketed “Pressed Ice Cream Sandwiches,” which place cold ice cream (pine nut-flan, peanut-banana, or almond turron-caramelized rice pearl) confections inside warm pastry wrappers. Caneles, Tocino de Cielo, and pressed Mollete sandwiches are all good, too.

In the evening, multiple versions of Barmini’s foie gras waffle (Foieffle) are available, including foie-less sweet versions – all were overcooked, but loaded with enough toppings that it didn’t matter. Candied “Mini Donuts” and passion fruit-coconut-white chocolate Tropiscle popsicles were stronger hits. You can also sample bites from Bazaar and Jaleo locations, including cones, egg/caviar, and jamón/nori/caviar combos, as well as Bazaar Mar’s liquid nitrogen-chilled Nitro Continental Sour sorbet here. Presented theatrically on a cart and made by hand as you watch, it’s the closest thing to Bazaar magic you can get without setting foot in a full Bazaar.
